My essential 10

I've been talking a lot this month about kitchen organizing. Maybe it's the cold weather? Maybe I'm nesting? Who knows?! I just seem to have an obsession with being in the kitchen.

My dear friend Kim O'Donnel recently wrote a post over on the Washington Post website explaining her essential "20." These are the things that she uses so often she insists that she make space for them in her kitchen.

I found the list creation to be a fun activity. Many of these items would be unitaskers in other people's kitchens, but because they are used daily and weekly in our home, they are truly vital in my kitchen. What are your kitchen essentials? How do you store and use them? And, more importantly, why? Here are 10 of my kitchen essentials:

  1. My Le Creuset enameled cast iron skillet and French oven are my go-to pieces for most everything I make on the stove or in the oven. I leave my skillet on the stove top at all times (it's red, it's happy, it's artwork) and store my French oven in the cupboard with my other pots and pans. The French oven takes up a lot of space, but is worth it. (And, we have a Le Creuset outlet store nearby, which means I purchased both of these for 60% off their MSRP!)
  2. Sea salt and spice rubs from the Aloha Spice Company. The chicken and pork rub is always stocked in my pantry and is used a great deal on simple dinners in our house. The sea salt is great on eggs, meats, and even tofu. My favorite of the sea salts is their smoked flavor, which unfortunately isn't currently available on their website.
  3. Single-serve Nespresso espresso machine. (I should note, when we bought this unit, it was half the price of the current listing. Wow, is it expensive now!) I can honestly say that this espresso maker saved my marriage. My husband likes his coffee bitter and strong, I like mine smooth and medium. Since we both work from home, we used to have fights every day about the awful coffee the other person made. Now, there are no more fights. Additionally, we use the hot water straight from the machine to make hot cereal, tea, and anything requiring hot water. It sits on our counter all the time and says, "drink coffee in peace!"
  4. Rancho Gordo heirloom beans are another must-have item in my pantry. The garbanzo beans become homemade hummus, the midnight black beans are made into soups and burritos, and the butter beans (not currently listed on the site) are great with ham and spices. Their dried popping corn is also delicious.
  5. After falling in love with the American Pie pizza cookbook by Peter Reinhart, I started using a pizza/bread baking stone. In my convection oven, it turns out beautiful pizza crusts every time. I also use it when I make pita and other breads. I keep it in my oven when not in use, and simply rest it on the counter when I need to bake and not use it.
  6. Along the lines of the last item, is my pizza peel. I wouldn't be able to transport my pizzas any other way. It has a hole on its handle and is stored hanging on the wall in my kitchen.
  7. Steel cut oats from McCann's are my breakfast food of choice. I make a pot on Sunday morning, refrigerate it, and scoop out of it throughout the week. I'll add a teaspoon of maple syrup or a little brown sugar or cinnamon to change it up from day to day. Sometimes I'll toss in a handful of dried fruit and a little extra water when I'm making it up on Sunday. Delicious and good for you.
  8. I am blessed to have a Penzey's Spices only a few miles from my house. I buy all of my curries (Garam Masala and Balti are staples) and dried spices there. Their cinnamons are fantastic, too.
  9. Prepared to be blown away, but one of my essential kitchen items is a bread machine. I make whole wheat bread twice a week, and this machine saves me so much time from when I used to bake bread in my oven. Since I control what goes into the bread, I know that it is healthy, contains no preservatives, and is lower in calories than anything I can buy at a grocery store. I regularly make specialty and breakfast breads in it, too. Since I use it many times a week, it's not a unitasker. However, if you don't routinely make homemade bread, don't buy this as it takes up a large amount of counter space.
  10. Last, but certainly not least, on my list of 10 items are flavored olive oils. When the warm, fresh bread is ready to be sliced, I must do a taste-test immediately. A little flavored olive oil makes the perfect dipping sauce. Sometimes I make my own and other times I pick some up at O&CO. It's also great to set on the table as a pre-dinner appetizer.

Can you/have you posted your bread recipie? I have yet to find a GOOD home made whole wheat recipie that works in my bread maker.

1) My waffle iron. It's an old cast iron one I bought for $2 at a garage sale. The plates flip to a flat side that is perfect for paninis. I use it a lot.

2) We have a tea French Press (for loose leaf) and a coffee one. Love them.

3) Bright red kettle. It makes my stove happy and is used a couple times a day in the winter.

4) Lime green colander. It's pretty enough to hang on the wall, and useful too.

5) 10x14 enamaled cast iron cake pan. It's orange. It cleans easily, looks great and can even be used on the stove top.

6) Mason jars. I can in them and store things in them. So handy, and kind of cute.

7) I second you on the steel cut oats, we eat them a ton.

8) Magic Bullet. I got it for a birthday gift and it's fantastic. I make shakes, breadcrumbs, pesto, chop nuts. I didn't think I'd love it so much, but it's so much easier to use than a blender.

9) We always have one kind of fancier salad dressing. To keep us eating salad. Right now it's green tea ginger vinegrette (http://tasteoftheokanagan.com/).

10) My apron! I have the prettiest apron a friend made me. And I'm a very messy cook, so I embrace my inner housewife :)

How very fun!
First off, I want to say I'm extremely jealous you have a Penzey's Spices near you. We were in one while in Pittsburgh and loved the place. Fresh herbs & spices for ridiculously low prices!!!
Okay, my list in no particular:
1) My Kitchenaid Stand Mixer (Pro); the BF got it for me for Christmas a couple years back. LOVE it. 2) Fresh herb & spices, the BF built me a shelf that spans 3 double hung windows width so I can put our potted herbs on all year long. Sweet Basil & thyme are a staple all year long. And we have a whole cupboard (one of the smaller ones next to the stove?) full of spices that we buy from BJs/Sam's Club. 3) Coffee maker & french press; we're coffee-aholics. 4) My wok; my mom brought it back from China. The thing is hand hammered and it's ginourmos. It hangs proudly next to all our frying pans. 5)George Foreman Grill; the BF's parents bought it for our first apartment together because we had no propane grill. Now the thing is a staple for cooking bacon. All the fat just drains completely off and it's the crispiest bacon EVER. 6)Our 2" thick bamboo cutting board. The thing is amazing and we got a great deal on it at Marshalls. 7)Our 3 tier wire hanging basket. Hangs off of our wall over the cutting bench, artfully displaying fruits, garlic & ginger! 8) Garlic. We use garlic like it's going out of style. There is always at least 5 heads of ginger in our kitchen. 9)Salt & Pepper Grinders; we got a beautiful stainless steel pair as a gift. Essential in cooking and pretty enough to display. 10) All my baking essentials. Good muffin pans, pie dishes, assortment of cake pans, decorating supplies, baking ingredients, wire racks, etc. All in a cupboard underneath the counter and the other cupboard on the side of the stove.

I’d love to see the bread recipe, as well. I love homemade wheat breads, especially when they can be made in the bread maker.


1) Kitchenaid Pro mixer. I love to bake, so I use this all the time.

2) Cuisanart Belgian waffle maker. It makes great, “cakey” waffles!

3) Cast-iron skillet for perfect cornbread

4) Steamer… to cook the most amazing tamales that my mom gets from this sweet, Hispanic lady in my hometown. She freezes them for me, and all I have to do is steam them for about twenty minutes.

5) Good knives. I love my set of Chicago Cutlery knives that my parents gave me a few years ago.

6) A beautiful handcrafted cutting board that my husband bought at a local arts festival and then gave to me as a housewarming gift when we bought our first place

7) A set of stainless steel canisters… for flour, sugar, tea, and coffee (but I don’t drink coffee, so I keep hot chocolate in the coffee canister). They were my grandmothers.

8) Zeroll ice cream scoop. It’s the best.

9) Tea towels that were embroidered by my husband’s late great-grandmother… so special.

10) Bialetti pizza chopper.

Hi, everybody! Here is my wheat bread recipe that I use in my bread machine. After much trial and error, this is the recipe I've created that works every time.

Erin Doland's Wheat Bread (for the bread machine)

1-1/4 c. Water
3 Tbl. Honey
2 Tbl. Butter, diced into a dozen or so cubes
1-1/5 c. Whole Wheat flour (I use King Arthur)
1/2 c. High Gluten Bread flour (I use King Arthur)
1 c. Unbleached White flour (I use King Arthur)
1-1/2 tsp. Kosher Salt
1/4 oz. Active Dry Yeast

I use one of the presets on my bread machine, and I have no clue what the times are for kneading, rising, kneading, rising, and baking. (Pick one and see what happens -- it can be like a game!)

Immediately after the cooking phase finishes, I pull the bread out and dump it from the pan. If you leave it in the hot machine and pan, it does weird things to the bread. I let the bread cool on a cooking rack for five minutes. Then, I use a pastry brush and brush 1/2 Tbl. Melted Butter over the entire crust to make it supple. Wait at least 10 more minutes for the butter to work it's magic ... then enjoy!

One that I can't live with out is pepper flakes. I love spicy food so I can literally add the pepper flakes to just about any meat (except fish).

1) My blue Kitchen Aid mixer. I wanted this for so long, and the color inspired the rest of the decor in my kitchen. I keep it on the counter next to the stove. I make cakes and cookies in this all the time. I even have an extra bowl so if I am on a baking streak, I don't have to stop and wash the one bowl before making the next thing.
2) My Cuisinart food processor. This is out, too, and it gets used slighly less often. It is an older model from my mom, and nothing is better at grating cheese, mashing bananas for bread, everything.
3) Calphalon pot with steamer insert - I love this pot, and the steamer insert works great for making green beans and other veggies.
4) Calphalon nonstick 8" and 10" pans - these are my two favorite pans to use for making scrambled eggs, cooking meat, and perfect grilled cheese.
5) Salt and pepper grinders - grinding them fresh does make a difference.
6) Good chocolate chips for baking.
7) My new knives that I got as a wedding gift. I never realized how much of a difference good knives make. This set made me realize that different knives are great for different purposes.
8) My Rosle garlic press from Williams-Sonoma. My (now) husband got me this for Christmas a couple of years ago, and I can't believe how fantastic it is. It smashes the heck out of garlic (even unpeeled), and all the parts swing open so cleaning it is almost as simple as just rinsing it off.
9) Pampered Chef Batter Bowl - it's like a giant mixing cup, and it is big enough to hold pretty much anything I need to mix. I make waffle batter, brownie batter, and muffin batter in there all the time, because it's really easy to pour out.
10) My coffee maker. I love having coffee at home on the weekends and watching Food Network before my husband wakes up.
