What to Make with Basil and Goat Cheese

Realsimple_cooking_basil_intro My second cooking resolution is to stop letting food go to waste. In my fridge I have a bunch of basil that is starting to wilt and a button of goat cheese. So I have 2 ideas for dinner swirling in my head:



1. Steak Sandwiches. I have 2 pieces of sirloin I could cook and slice. I'll need to buy nice French bread, but I could smear the goat cheese on the bread and layer with sliced steak and basil leaves. Maybe even toss on some roasted red peppers that I have in a jar.



2. Spaghetti with Basil, Goat Cheese, and Bacon. Just a simple pasta dish tossed with crumbled-up goat cheese, torn basil, and cooked bacon.



Any other ideas?

try throwing the goat cheese and basil in the food processor with butter, garlic (you can roast it in the microwave to make it less spicy and more garlic-y) and some toasted pine nuts to make a pesto- goat cheese spread.... yum!

I've got no suggestions for the goat cheese...but I think it's great that you're thinking of ways to use leftover items in the fridge. We've been doing the same lately and it's amazing the creative menu ideas you can come up with!
As for the basil you can always just dry them to use as a later date!
