What's Your Go-to Appetizer?

Img_0016 I'm going to a pot luck cocktail party this weekend and need to figure out a starter that will sit well for early birds and latecomers alike. I'm leaning toward bringing my sister's super simple, go-to hors d'oeuvre recipe: Lemon Parmesan Artichoke Bottoms.



The hardest part of this recipe is finding the can of artichoke bottoms. Yes, bottoms. Don't be scared by the can, which looks like it's been on the shelves for decades. Trust me, they're delicious. There's only one grocery store near me that carry them so I always stock up when I can. I've tried it with large artichoke hearts, but you don't get the same results. Here's the recipe:



Lemon Parmesan Artichoke Bottoms



2 cans artichoke bottoms (either 5-7 count or 7-9 count)
1 1/2 cups long shredded Parmesan
1/2 cup mayo
3 garlic cloves, minced
2 tsp. fresh  lemon juice
1/4 cup pine nuts



1. Preheat oven to 375 degrees.

2. Lightly coat a glass baking dish with cooking spray. Place artichoke bottoms in baking dish.

3. Combine everything but pine nuts in a bowl. Place about 1 Tbsp. (or more, depending on size of bottom) of mixture on top of artichoke bottoms. Sprinkle with pine nuts.

4. Bake for 20 minutes.



It's super easy and so sinfully delicious. What hors d'oeuvre or appetizer do you serve in a pinch?

If you balk at prepared foods, you might not like this one, but as simple as this is, its hands-down the most popular thing I have ever made. I get requests for it all the time.

Lately I've been stuck on wild boar sausage, fig and watercress skewers. They're super simple, can be served at room temperature and the best part? They're delicious, very pretty to look at, and make a great conversation piece!

I always get dates wrapped in bacon at tapas restaurants--and they're almost as easy to make as they are to order! Stuff the dates with a sliver of parmesan cheese and voila! Impressed guests.

I love artichoke bottoms, this sounds delicious and I can't wait to try it! Thanks!

My go to bites are dried or fresh figs stuffed with gorgonzola and wrapped with prosciutto - broil just until the cheese gets melty, and prosciutto gets crisped. If you use dried figs, get the soft ones. the ones sold in the right rings are too dry.

I made this artichoke appetizer two days in a row for two different parties and people went absolutely nuts for it. I was complemented over and over and asked for the recipe too many times to count. This will definetly be my go-to appetizer. And happily, I had no trouble finding the artichoke bottoms!
