Zack Brown had one small mission: Make potato salad.
What likely started as a joke-Kickstarter campaign between friends has gone viral, raising more than $46,000 (and counting!) and inspiring think pieces galore. Fortunately, as Brown told Mashable, “We’re going to use that [money] to do the most good possible… that money will not go in my pocket. Or into my friends’ pockets.”
Because of Kickstarter’s terms of service, Brown does have to make an actual potato salad in order to receive the funds. The only problem? “There’s no single recipe for inspiration,” he writes. He’s got 21 days left to find a recipe, and we’d love to help out.
Since Brown says on his Kickstarter page that he wants to make four easy salads—ideally with a vegan option—we humbly suggest our simple recipes for the project:
1. Herb Potato Salad: Made with new potatoes, grain mustard, and red wine vinegar, this recipe can very easily be double, tripled, centupled, or whatever the need may be. It’s sure to appease the funders who have requested a no-mayo recipe.
2. Creamy Potato Salad With Bacon: The ultimate classic salad—and with the addition of bacon, the Internet would be very pleased, indeed. (Of course, this salad isn’t vegan-friendly.)
3. Warm Smoked-Trout Potato Salad: He could offer premium donors a taste of this upscale twist on the picnic favorite. Brown’s local Kroger should carry smoked trout at their fish counter.
4. Grilled Potato and Onion Salad: If Brown finds that boiling potatoes is too taxing, he can always toss a few red potatoes and red onions of the grill, toss ‘em with balsamic, and call it a salad.
