Waste Not: A Summer Veggie You Can Freeze

June 27, 2014 | By | Comments (0)

cornHere’s a kernel of wisdom about one of summer’s most coveted items: Fresh corn tastes best within a day of purchase, but unshucked ears can be kept for up to 3 days tightly wrapped in a plastic bag in the refrigerator.

If that window starts to dwindle and your corn is still sitting untouched, place the corn in a resealable plastic bag (you can freeze the cobs whole or remove the kernels first) and store in the freezer for up to 3 months. Corn can be frozen before or after cooking, but blanching them first helps preserve color, flavor, and texture.
