Quinoa With Sweet Potatoes, Kale, and Pesto

Looking for a great way to sneak more greens into your diet? Clamshell containers of baby kale are widely available in the produce aisle, helping you to get this healthy green into your meals by the handful without any prep.

Think of it as heartier baby spinach: tender enough to eat raw but equally good stirred into soups or pastas (use it in place of chopped mature kale in Quinoa With Sweet Potatoes, Kale, and Pesto, above).

Once opened, prewashed baby kale typically lasts for up to a week.
