Here’s a tip to save time the next time you’re putting one together: To marinate meat or fish without actually marinating them (who has time?), simply load them up onto a skewer with some citrus fruits. Arrange the fruits on the skewer so that one of the cut sides of the fruit (not the rind) touches the meat or fish. The meat will soak up the flavor as it cooks—resulting in instantaneous marination.
