Homemade Mint-Melon Popsicles

You don’t need special molds to make delicious (and healthy!) ice pops. As long as you have a kitchen that’s stocked with ice-cube trays, plastic drink cups, empty yogurt containers, or small canning jars, you can make frozen desserts to enjoy all summer long. Here’s how:

1. Place one or more of the above containers on a baking sheet that fits easily inside your freezer.

2. Add the ice pop mixture to each container. Freeze for about one hour, or until the pops have set enough for a Popsicle stick to stand straight up on its own. Insert a stick into the center of each ice pop.

3. Chill until completely frozen, then take the baking sheet out and allow pops to defrost slightly (about 5 minutes) before serving. If you’re in a rush, dip each container halfway into a shallow pan of warm water. The ice pops should slide out easily.
