Green beans will hit their peak  in the next few weeks. To snap up the nicest ones on offer, look for pods that are firm and slender, with a velvety emerald skin. Stay away from green beans in which the shape of the seeds is visible through the skin—those are tough and overly mature. When you get the green beans home, store them in the refrigerator (unwashed!) in an airtight container for up to 5 days.
