Chicken and Pasta Soup

You may not have a cold or the flu (you lucky, lucky reader), but surely, someone you know does. So why not whip up a batch of homemade chicken soup this weekend, and share it with friends and family who really need it? Our slow-cooker recipe for Chicken and Pasta Soup requires exactly five minutes of hands-on time. Yes, it has to cook in the slow-cooker for about five hours, but just think: That’s five hours that your kitchen will smell like heaven.

All you have to do: Place chicken, carrots, celery, onion, garlic, bay leaves, and 6 cups of water, 1 teaspoon of salt and 1/4 teaspoon pepper in a five to six-quart slow cooker. Cook it for on high for 4 to 5 hours. Twenty minutes before you’re ready to serve it, transfer the chicken to a bowl, remove the onion and bay leaves, and add pasta. Cook until tender (15 to 18 minutes), and meanwhile, shred the chicken. When the soup’s ready, stir in the chicken and serve it with parsley. Yum!

    I love it when you only have to spend a few minutes to get a delicious meal in the end.

    Back before slow cookers, my mom had some meals she put in a small pressure cooker – usually a small roast with vegetables. It was done in no time and tasted so good.
