Now that peaches are in season, it’s the perfect time to make this incredibly easy and delicious summer salad. Best of all, this Peach, Mozzarella, and Basil Salad only has three ingredients—not counting olive oil, salt, and pepper.
All you need are fresh peaches (make sure they’re as ripe as possible), some basil leaves, and fresh mozzarella. Use the absolute freshest mozzarella you can find—the soft, pillowy, melt-in-your-mouth stuff if possible, not the dense, packaged block you’ll see in most grocery stores. Because there are so few ingredients, you want to make sure everything is high-quality and delicious.
Cut the peaches into pieces, tear up the basil, and cut the mozzarella into 1-inch chunks. Put everything in a pretty bowl and toss with some good olive oil, kosher salt, and pepper. And that’s it! I served it at room temperature as part of an outdoor brunch. The sweet, juicy peaches were an ideal partner for the salty, fluffy mozzarella, and the basil added an herby, summery note. And it would be fun to mix it up with nectarines, plums, or melon. I’ve definitely found my go-to summer salad.
