How to Soften Brown Sugar (and Keep it Soft!)
If you get caught with hard-as-a-rock brown sugar once your mixer is already in motion, you can still rescue that batch of cookies with this quick trick.
To soften your sugar follow these steps:
1. Place the sugar in a microwave-safe bowl.
2. Sprinkle with a teaspoon of water.
3. Cover with a damp paper towel.
4. Microwave in 30-second intervals until soft.
Once you’re ready to put the brown sugar away store it in an airtight container or a zippered plastic bag, and add either an orange peel or a marshmallow to keep it soft.
