Healthy Salad Week Three!
Spring seems to have arrived so early this year (fingers crossed we won’t have a cold snap!) which gets me really excited about one of my favorite vegetables—mushrooms!! Chanterelles and morels aren’t in the market yet but the crisp air inspired me to make a light salad with a few quickly sautéed shiitake mushroom, watercress, Napa cabbage, and scallions. The dressing may be a bit quirky for some. If it doesn’t appeal, the salad would also go great with a light red-wine vinaigrette.
Here is a rough recipe:
Dressing
- vegetable oil
- lime juice
- fish sauce
- soy sauce
- light brown sugar
Salad
- vegetable oil
- small clove garlic, sliced
- shiitake mushrooms, sliced
- watercress
- Napa cabbage, shredded
- scallions, sliced
First I made the dressing. Next I sauteed the garlic and shiitakes in a little veg oil. Once those cooled a bit I tossed everything together in a bowl. Voila!
