Recipe Ideas for Spinach
In my big grocery shop this weekend, I bought a big—no, giant—bag of spinach. A bunch of the recipes I plan to make this week contain spinach, so I needed a lot. Yesterday on my commute home, I started thinking (don’t ask me why) of all the things I could do with that giant bag of spinach. Here’s what I came up with:
-add it to eggs in the morning
-sautee it for a fast side dish with a store-bought rotisserie chicken (my plan tonight)
-stir it into soup (a big handful went into my Sunday minestrone)
-steam it and serve as a bed for salmon
-sautee it for a fast side dish for a small frozen meal
-make a salad out of it for lunch
-chop it up really small and add it to pasta for my daughter’s dinner
I’m sure there are a million other ways to use spinach, but here’s my point: In the past, I would buy the big bag of spinach for one recipe and end up throwing the rest of it away a couple of weeks later when the leaves were getting shriveled and/or slimy. That’s because I hadn’t made a plan for how to use it. But with a little forethought, I can easily finish that giant bag before the weekend. It’s that planning thing again—seems to be a theme here!
