In the test kitchen earlier today I was working on a cake recipe. Trying to save time while making the batter I decided to break the egg on the rim of the bowl, while the mixer was running. Rookie mistake! I dropped the egg in the batter, the shell got mashed every which way and it was a big ol’ mess.
Needless to say, I had to start over thus spending much more time than if I hadn’t tried to rush through it.
Normally, I turn the mixer off, crack the egg on the counter, and dump it into the batter. But, if one wants to be extra careful you can break the egg into a small bowl before adding to the batter.
