Keeping it Simple

I went over to see a friend’s new apartment last night. She told me we would have a simple dinner and finish a bottle of good wine she had.

She put out some Manchego and cornichons when I arrived and we toasted each other with a perfectly crisp end of summer white wine. She sauteed some kale and fried a couple of eggs and then I crisped a split baguette in a little olive oil. We showered the eggs and kale with a little freshly grated parm and then sat down to a grown-up table complete with cloth napkins and we gabbed and caught up and decided the wine might have an unusually high alcohol content.

Though it may have been the wine talking, we decided it was one of the best meals we have ever had together. Sometimes all you need is 6 simple ingredients and a great friend (and maybe the wine) to make a really special meal.
