Now that this cool weather staple is starting to show up in farmers’ markets, grocery stores, and CSA boxes across the country, it’s time you knew how to prepare it, too.
If you cook squash with the skin on, then simply cut it open, and scrape out the insides. But if you want to peel it before you cook it, here’s the easiest (and safest) way to do it.
First, cut off about 1/2 inch at each end. This will give you a staple base for peeling in both directions. Next, use a y-shaped peeler to peel off the skin. Using a y-shaped peeler will give you more control, and prevent dangerous slipping. If you can peel the whole length of the squash, go for it. Otherwise, peel halfway then flip it over and peel the other end.
