Earlier this week a friend asked me to help him make an entrée for an international potluck lunch he was supposed to participate in at work.
When we were planning the dish, he made two recipe suggestions: chicken paprikash and shepherd’s pie. I suggested going with the latter since it would be easier to double the recipe and serve to a large group of people.
We ended up having a lot of fun making the dish together and, though it was time-consuming, it took very little effort to cook. Plus, I heard it was a hit among his coworkers.
I think the key to making successful potluck dishes is to choose fan-favorite comfort foods that can easily serve a large number of people (or be doubled with minimal effort). Here are some ideas.
