Peach Hand Pies

Can you believe I haven’t baked a pie all summer? I’ve thought about baking a lot of pies but just haven’t gotten around to it. Last weekend my parents came to visit with some peaches from my sister’s tree, and I knew I could resist no longer.

By Monday, we only had 4 peaches left (we’d eaten the rest out of hand), not enough for a whole pie, but plenty for a few hand pies.  I peeled, pitted and diced the fruit and tossed it with a little sugar, cornstarch, and a pinch of salt. I tucked the peach mixture in my favorite pie crust, brushed the dough with egg, and dusted the pies with raw sugar.  They baked as I got ready for bed and cooled on the stovetop as I slept. I drifted off to sleep with the smell of fruity, buttery pastry in the air.

My only regret is that I didn’t eat one right out of the oven…but it made a pretty great breakfast.
