Campfire Spaghetti and More

A few weeks ago we went camping in the Catskills. It’s becoming a little bit of a summer tradition. Some friends act surprised like we’re really roughing it out there but we take an air-mattress and wine and dijon mustard: all the necessities.

Sometimes we cook right over the campfire and sometimes we use our little Coleman stove but either way we always make our camp meals a priority. We always end up satisfied (tacos, hot dogs, easy stuff) but this trip we really hit it out of the park. All-star meals included: Sausage and potato hash, quinoa salad with sauteed kale and country toast, spaghetti with fresh tomato sauce, and pork sausages with baked beans, pickles and mustard. With a cold beer that pork and beans dinner really blew us away. Oh, and there was pie too (but we didn’t make that ourselves). Now the only challenge will be outdoing ourselves next time.
