Quick Summer Pasta

20 minute pasta

I have been really really busy lately and haven’t had much time to make dinner much less grocery shop—I am sure many of you out there can relate!

When I get in this pickle I am often left putting together a quick pasta dish with whatever vegetables are hanging out in the fridge. This week’s concoction was my favorite shaped pasta—Pacchere—very thinly sliced zucchini, garlic, and a ton of Parmesan and olive oil.

In a large skillet, I sauteed the garlic and zucchini in olive oil with salt and pepper. Added the drained pasta to the skillet with a little of the pasta water and cooked it for a few minutes (this is a critical step that helps bring all of the elements together). I then removed the pasta from the heat, stirred in a bunch of grated Parmesan and drizzled the whole thing with good olive oil.

It got two thumbs up and only took 20 minutes!
