A New Meat for Your Grill

There’s nothing that says “summer” to me more than a backyard barbecue—I absolutely love them. Unfortunately for me, I don’t have any outdoor space, so I have to rely on the few people I know who actually do have access to a grill—usually on a rooftop, very occasionally in a yard. So when a friend recently invited me to a barbecue on his building’s roof, I was all over it.

I made two side dishes—a corn salad with basil, jalapenos, and red peppers and this amazing Chickpea and Raisin Salad from Real Simple (it got raves from everyone, and I’m not just saying that because I work here). I also brought along some bison steaks sent to me by High Plains Bison I’d been meaning to try. Why not just toss those on the grill, I thought.

Bison SteakBecause bison is so lean, it only needs a short cooking time. Someone threw the filets on the grill, and in a few minutes they were on the table. Curious, we all cut off a piece and tried it. The bison was absolutely melt-in-your mouth delicious—tender, rich, flavorful, and juicy. Luckily, it had been cooked to a perfect medium-rare—overcooking makes the meat tough and stringy. Everyone was blown away by how tasty it was. Even better, bison is actually healthier than beef or pork–it has less saturated fat and cholesterol, and fewer calories.

So next time you’re thinking of grilling up some steaks, consider bison instead. I’ll definitely be experimenting with burgers, steaks, and sausages this summer. Assuming people keep inviting me to their barbecues.
