We're taking Easter dinner on the road this year. My 99-year-old grandmother (yes, 99!) isn't feeling up to traveling, so my family is bringing the meal to her house. The problem? She has a pretty small kitchen, so there's not a ton of room for prepping and cooking. Instead, my Mom and I are going to split the cooking duties (she's doing the main and desserts, I'm taking care of the sides) and prepare everything we can in advance. This means I'm on the hunt for make-ahead, delicious side dishes. Here's what's in the running:

The Spring Panzanella gets my vote! I think it will be fabulous with my leg of lamb recipe.
(My favorite new vegetable to roast is kale. Wash the kale, spin dry, tear into bite size pieces, sprinkle with olive oil and salt and then roast at 350 degrees for 10 minutes.
Even non-vegetable eaters love roasted kale!)
