I have a newfound favorite dinner party dish: BBQ Ribs. They are messy and delicious and evoke memories of early childhood backyard barbeque feasts. Admittedly, I have never actually made them myself. I’ve grilled plenty of burgers, roasted my fair share of loins, and recently conquered a Rack of Lamb Persillade (I know – so fancy pants!). But I have never ever made ribs at home, and I think that is about to change.
My friend Claudia hosted my Fiance and I for the weekend in Miami. Ever the consummate hostess, she had prepared the most delicious, roll-up-your-sleeves, prepare-to-get-messy dinner for Saturday night – juicy, lip-smacking marinated BBQ Ribs with smashed potatoes and a simple green salad with vinaigrette. Yum!
We dined under the stars in the warm Miami night. It was so simple, so perfect. I am waiting to get her secret recipe in writing – but I’m told it was inspired in part by a Jamie Oliver marinade and much informed by scouring this website which I had never heard of (and now fear I will lose hours exploring). The preparation takes a couple days, and I know it involves brining, a lot of marinating, roasting, and grilling. My Fiance looked at me after dinner and uttered a gentle but earnest plea: Please Learn How To Make This.
Aside from the complete and total deliciousness of the meal, a dish that requires eating with your hands and getting totally covered in sauce is just perfect for a dinner party among friends – intimate, relaxed, and totally fun.
